Front of house manger turned smokehouse chef David Carter originally earned his stripes in the culinary world working at fine dining restaurants including Roka and Gordon Ramsay at Claridge’s.

Looking for a change, the Barbadian launched barbecue street food stall Smokestak in 2013 and has never looked back. After leaving Roka, Carter went to Houston, Texas to buy a smoker and set up a pitch at Street Feast in east London’s Dalston. Now, after a successful pop-up at The Tasting Rooms, he has moved his concept to a more permanent setting, and is set to open the doors to a 75 seat cover restaurant in Shoreditch, London, later this year.
